Amaebi, a sweet shrimp, is a new specialty of Fukui Prefecture, Japan. These shrimp thrive in the coastal waters of Fukui, where the sandy, muddy seabed offers the perfect water temperature and plenty of plankton for them to feed on. This ideal environment gives Fukui’s amaebi their distinctive sweetness and melt-in-the-mouth texture.
